Pastillas de Leche
A week or so ago we rode a taxi that was also selling milk candy. We bought some because Vincent loves milk candy, and it turned out very yummy. I set out to replicate it.

Ingredients:
2 1/3 cup of powdered milk (set aside the 1/3 cup)
2 1/3 cup white sugar (set aside the 1/3 cup)
1 300ml can of sweetened condensed milk

Sugar to roll the candy in
Paper to wrap the candy in


Put 2 cups of powdered milk into a large bowl, poking apart lumps with a fork.


Add 2 cups of sugar, and blend evenly together.


When the sugar and milk are evenly distributed pour in the condensed sweetened milk gradually, while mixing the milk and sugar blend into the liquid.




Make sure that you've mixed together the liquid thoroughly before adding more of the liquid milk.


When the milk, sugar and condensed milk are thoroughly combined, you'll have a rather thick, sticky dough. Gradually add in the reserved 1/3 cups of milk and sugar to achieve a more handle-able consistency.


Make sure you also get the 'underside' of the dough.


Now, you have the option of simply just putting the candy into a Tupperware and sticking it into the fridge and eating it by the spoonful. Otherwise, you can make it into more edible portions by rolling the candy in more sugar or milk (I went with sugar) and wrapping it up in candy wrapper, or putting them in little candy cups, or dipping in chocolate to be coated.


Take a teaspoon (the kind you actually stir tea with) and scoop out some of the candy


Drop it into the sugar and roll into a ball, or a log, whichever you prefer.


I went with a log-shape. Sort of. Coat the candy with enough sugar that you can pick it up without the candy sticking to your skin.


Do over and over, till you run out of candy.



You don't have to stick to white sugar; you can coat the candy with colored or flavored sugar, sprinkles, or chocolate powder, or other delicious combinations. Experiment!

If you want to flavor the candy with say, coffee, or chocolate, it would be best to mix in the added flavor with the sweetened condensed milk before adding the liquid milk to the milk powder and sugar. Some areas of the Philippines specialize in Pastillias that are wrapped in beautifully cut paper wrappers, the paper lace streaming out from the wrapped candy.
